Our story

For over 75 years, Los Ojos has been a gathering place for the community of Jemez Springs. Through changing times, the saloon has remained a beloved restaurant and live music venue where people can be together and be themselves.

Our building was originally constructed as a general store by Moses Abousleman, a Lebanese immigrant who settled in the Jemez Valley around the turn of the 20th century. Historical accounts date construction between the late 1800s and 1912, confirming it as one of the oldest continually operating commercial structures in New Mexico. The original adobe and timber structure remains part of the building today.

In 1947, the building officially became Los Ojos Bar & Grill, beginning its identity as the village saloon. It quickly became known as a welcoming stop for locals, travelers, ranchers, bikers, hikers, hot-springs visitors, and anyone passing through the canyon.

The interior’s old-west character—worn wooden bar, rustic décor, taxidermy, historic photographs—became a signature part of the Los Ojos experience.


Over the decades, Los Ojos grew from a small saloon café into a full restaurant known for New Mexican and American comfort food, including chile dishes, stews, burgers, and hearty mountain fare.

In recent years, Los Ojos has elevated its menu to include fresh-pressed juices made in-house daily, vegan & gluten-free options, and a refined drink menu blending historic saloon roots with contemporary creativity.
